Artist's Description

San Baltazar Chichicapam, Oaxaca, Mexico - A distillery where residents work cooperatively to produce mezcal. The mound of dirt in the foreground is a pit oven where piñas, or the hearts of the maguey plant, are roasting for several days above a layer of hot rocks. After the piñas are baked, the are crushed, then fermented with water, and the liquid is distilled into mezcal. The small cross with flowers atop the oven is placed there to ensure good results.
